- 1 cup (200g) creamy peanut butter
- 1/2 cup (100g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1/2 teaspoon (2g) baking soda
- 1/4 teaspoon (1g) salt
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
- Flatten each ball slightly with a fork, creating a crisscross pattern.
- Bake for 10-12 minutes, or until edges are lightly golden. Cookies will be soft; they will firm up as they cool.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 5 days.
Notes
- For chewier cookies, slightly underbake.
- Make sure to use room temperature butter for better consistency.
