Ingredients

  • 1 lb boneless chicken thighs
  • 1 lb shrimp (fresh or thawed from frozen)
  • 8 oz Andouille sausage
  • 1 can (14 oz) diced tomatoes (no salt added)
  • 1 cup bell peppers (mixed red and green)
  • 1 medium onion
  • 3 cloves garlic
  • 3 cups chicken broth
  • 2 cups long-grain rice
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping onions, bell peppers, and garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
  3. Add chicken thighs and sausage slices; cook until browned on all sides (7-10 minutes).
  4. Stir in Cajun seasoning and canned tomatoes (with juice); cook for another minute.
  5. Add rice and chicken broth; bring to a boil then reduce heat to low and cover for about 20 minutes until rice is tender.
  6. In the last five minutes of cooking, add shrimp; fluff everything together before serving hot.
