A delicious Cajun chicken and shrimp dish cooked with rice, vegetables, and spices.

- 1 lb boneless chicken thighs
- 1 lb shrimp (fresh or thawed from frozen)
- 8 oz Andouille sausage
- 1 can (14 oz) diced tomatoes (no salt added)
- 1 cup bell peppers (mixed red and green)
- 1 medium onion
- 3 cloves garlic
- 3 cups chicken broth
- 2 cups long-grain rice
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping onions, bell peppers, and garlic.
- In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
- Add chicken thighs and sausage slices; cook until browned on all sides (7-10 minutes).
- Stir in Cajun seasoning and canned tomatoes (with juice); cook for another minute.
- Add rice and chicken broth; bring to a boil then reduce heat to low and cover for about 20 minutes until rice is tender.
- In the last five minutes of cooking, add shrimp; fluff everything together before serving hot.
Notes
- This dish is perfect for a quick weeknight dinner.
- Adjust the spice level by adding more or less Cajun seasoning.
- Serve with a side salad for a complete meal.
