- 1 lb lean ground beef
- 1 cup full-fat cottage cheese
- 2 medium sweet potatoes, peeled and cubed (about 3 cups)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, heat olive oil. Add chopped onions and minced garlic; sauté until translucent.
- Add ground beef to the skillet and cook until browned, breaking it apart as needed.
- Stir in cumin, paprika, salt, and pepper. Fold in cubed sweet potatoes until combined.
- Transfer the mixture to a baking dish and dollop cottage cheese on top.
- Bake for 25-30 minutes until bubbly and golden.
