Description

This delicious and hearty dish combines lean ground beef with sweet potatoes and cottage cheese, baked to perfection.


Ingredients

  • 1 lb lean ground beef
  • 1 cup full-fat cottage cheese
  • 2 medium sweet potatoes, peeled and cubed (about 3 cups)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, heat olive oil. Add chopped onions and minced garlic; sauté until translucent.
  3. Add ground beef to the skillet and cook until browned, breaking it apart as needed.
  4. Stir in cumin, paprika, salt, and pepper. Fold in cubed sweet potatoes until combined.
  5. Transfer the mixture to a baking dish and dollop cottage cheese on top.
  6. Bake for 25-30 minutes until bubbly and golden.
