Delicious buffalo chicken stuffed zucchinis topped with melted cheddar cheese and ranch dressing.

- 2 medium zucchinis
- 2 cups shredded rotisserie chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 2 green onions, sliced
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice zucchinis in half lengthwise and scoop out the flesh, leaving about 1/4 inch thick walls.
- In a bowl, mix shredded chicken with buffalo sauce until well coated.
- Stuff each zucchini half with the buffalo chicken mixture.
- Top with shredded cheddar cheese and place in the oven.
- Bake for 20-25 minutes or until cheese is bubbly and golden.
- Drizzle ranch dressing on top and garnish with sliced green onions before serving.
Notes
- Feel free to adjust the level of buffalo sauce to adjust the spice level.
