Description

Delicious loaded potato skins filled with creamy ingredients and topped with crunchy croutons.


Ingredients

Scale
  • 4 russet potatoes
  • Salt and fresh ground black pepper, to taste
  • ⅓ cup sour cream
  • 3 green onions, thinly sliced, white parts only, keep the green parts for garnish
  • 3 tablespoons chopped fresh parsley
  • ¼ cup shredded cheddar cheese
  • ¼ cup shredded parmesan cheese
  • ½ cup shredded part-skim mozzarella cheese
  • 2 cups garlic-flavored croutons, crushed, divided

Instructions

  1. Preheat the oven to 375˚F.
  2. Line a baking sheet with foil. Place the potatoes on the baking sheet and bake for 45 minutes.
  3. Remove them from the oven and mix until well combined.
  4. Divide the mixture evenly among the potato skins, pressing the mixture into the skins.
  5. Sprinkle the tops with the remaining crushed croutons.
  6. Bake for 15 minutes.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

  • For an extra kick, add some hot sauce to the mixture.
  • These potato skins are great as an appetizer or side dish.
