Description

A delicious blend of macaroni and cheese wrapped in a flour tortilla with seasoned ground beef and crispy bacon.

Ingredients

Scale
  • 2 cups elbow macaroni
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 4 slices bacon, cooked and crumbled
  • 1 pound ground beef
  • 4 large flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Instructions

  1. Cook the Macaroni: Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Cheese Sauce: In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook until the sauce thickens. Add the cheddar and Parmesan cheeses, stirring until melted and smooth. Add garlic powder, salt, and pepper to taste. Combine the sauce with the cooked macaroni.
  3. Cook the Ground Beef: In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon. Season with salt and pepper. Drain any excess fat.
  4. Assemble the Burritos: Lay out the flour tortillas. Evenly distribute the macaroni and cheese mixture, cooked ground beef, and crumbled bacon onto each tortilla. Roll the tortillas tightly into burritos.
  5. Cook the Burritos: Preheat a non-stick skillet over medium heat. Place the burritos seam-side down in the skillet. Cook each side for about 2-3 minutes until golden brown and cheese melts.

Notes

  • For extra flavor, sprinkle some chili flakes into the cheese sauce.
  • You can substitute beef with cooked chicken for a lighter version.
  • Serve with a side of sour cream or salsa for added taste.
  • To make it spicier, add jalapeños inside the burrito.
  • Ensure the skillet is not too hot to avoid burning the tortillas.
