  • 2 cups zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped

  • 4 large eggs
  • 1 cup milk or cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Vegetables: In a skillet, heat olive oil over medium heat. Add sliced zucchini and cook until tender (about 5 minutes). Stir in spinach and cook until wilted. Season with salt, pepper, and herbs.
  3. Arrange Crust: Place the pie crust in a 9-inch quiche pan. Trim excess dough.
  4. Add Layers: Spread the cooked vegetables evenly over the crust. Add the halved cherry tomatoes on top. Sprinkle shredded cheese evenly over the vegetables.
  5. Prepare Custard Mixture: In a mixing bowl, whisk together eggs, milk, salt, and pepper until well blended.
  6. Assemble Quiche: Pour the custard mixture over the vegetables and cheese in the crust.
  7. Bake: Place the quiche in the preheated oven. Bake for 35-40 minutes, or until the filling is set and the top is golden brown.
  8. Cool and Serve: Allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature.
