- 2 cups zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large eggs
- 1 cup milk or cream
- 1 tablespoon olive oil

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Vegetables: In a skillet, heat olive oil over medium heat. Add sliced zucchini and cook until tender (about 5 minutes). Stir in spinach and cook until wilted. Season with salt, pepper, and herbs.
- Arrange Crust: Place the pie crust in a 9-inch quiche pan. Trim excess dough.
- Add Layers: Spread the cooked vegetables evenly over the crust. Add the halved cherry tomatoes on top. Sprinkle shredded cheese evenly over the vegetables.
- Prepare Custard Mixture: In a mixing bowl, whisk together eggs, milk, salt, and pepper until well blended.
- Assemble Quiche: Pour the custard mixture over the vegetables and cheese in the crust.
- Bake: Place the quiche in the preheated oven. Bake for 35-40 minutes, or until the filling is set and the top is golden brown.
- Cool and Serve: Allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature.
Notes
- For extra flavor, add a sprinkle of Parmesan cheese on top before baking.
- Experiment with other vegetables like bell peppers or mushrooms for variety.
- If the crust edges start browning too quickly, cover them with foil midway through baking.
