Description

A delicious Tropical Carrot Pineapple Cake with hints of coconut and fresh fruit that brings a tropical flair to any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons pineapple juice

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. Combine Wet Ingredients: In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, mixing well after each. Stir in vanilla extract.

  4. Combine Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the grated carrots, crushed pineapple, shredded coconut, nuts, and raisins.

  5. Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  6. Prepare the Frosting: In a large bowl, beat the softened butter and cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and pineapple juice, beating until creamy.

  7. Assemble the Cake: Allow the cakes to cool completely. Spread a layer of frosting on top of one cake layer, place the second layer on top, and repeat the process. Frost the top and sides of the cake.

  8. Garnish: Optionally, decorate the top with additional shredded coconut and pineapple chunks.

Notes

  • Ensure all ingredients are at room temperature before mixing.
  • For a more tropical flair, consider adding a bit of lime zest to the frosting.
  • Use fresh pineapple if available for a brighter flavor.
  • Toast the coconut lightly before using for added texture and taste.
