- 1/2 teaspoon ground nutmeg
- 3/4 cup granulated sugar
- 3/4 cup brown sugar

- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 2 tablespoons pineapple juice
Instructions
-
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
-
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
-
Combine Wet Ingredients: In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
-
Combine Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the grated carrots, crushed pineapple, shredded coconut, nuts, and raisins.
-
Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
-
Prepare the Frosting: In a large bowl, beat the softened butter and cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and pineapple juice, beating until creamy.
-
Assemble the Cake: Allow the cakes to cool completely. Spread a layer of frosting on top of one cake layer, place the second layer on top, and repeat the process. Frost the top and sides of the cake.
-
Garnish: Optionally, decorate the top with additional shredded coconut and pineapple chunks.
Notes
- Ensure all ingredients are at room temperature before mixing.
