These Texas Twinkies Egg Rolls are packed with smoked brisket, creamy cheeses, and a kick of jalapeño. Perfect for dipping in honey or BBQ sauce!

- 1 pound smoked brisket, shredded
- 8 ounces cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack or pepper jack cheese
- 4 fresh jalapeños, seeded and finely diced
- 2 green onions, thinly sliced
- 2 tablespoons BBQ sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 16 egg roll wrappers
- 2 to 3 cups vegetable oil, for frying
- 1/3 cup honey
- 1 tablespoon hot sauce (optional, for hot honey drizzle)

Instructions
- Make the brisket filling by combining the shredded smoked brisket, cream cheese, shredded cheeses, jalapeños, green onions, BBQ sauce, and seasonings in a large bowl until everything is evenly mixed.
- Set up your rolling station with the egg roll wrappers, a small bowl of water for sealing, and a tray or parchment-lined baking sheet for the filled rolls.
- Fill and roll each egg roll by placing 2 to 3 tablespoons of the brisket mixture near one corner of a wrapper, folding the corner over the filling, then folding in the sides and rolling tightly, sealing the edge with water.
- Heat 2 to 3 inches of vegetable oil in a heavy-bottomed pot or deep skillet to 350°F (175°C).
- Fry the egg rolls in batches, being careful not to overcrowd the pan, turning occasionally until they are deep golden brown and crispy, about 3 to 4 minutes per batch.
- Transfer the fried egg rolls to a paper towel–lined tray or wire rack to drain off excess oil while you finish the remaining batches.
- Stir together the honey and hot sauce (if using) in a small bowl to make a simple honey or hot honey drizzle.
- Serve the Texas Twinkies egg rolls warm, drizzled with honey and paired with ranch dressing and extra BBQ sauce for dipping.
Notes
- This recipe can be adjusted by using different types of cheese or adjusting the spice level with more or fewer jalapeños.
- For a healthier option, consider baking the egg rolls instead of frying.
