Description
A delicious fajita steak recipe with fresh vegetables and a spicy kick.
Ingredients

- 1 lb skirt steak
- 1 pk fajita seasoning
- 2 tbsp olive oil (divided)
- 1 red bell pepper
- 1 green bell pepper
- 1 small white onion
- 2 jalapeños
- salt and pepper (to taste)
- cilantro and scallion (to garnish)
Instructions
- Brush 1 tbsp olive oil all over the meat, sprinkle the fajita seasoning on to both sides of the steak along with sea salt and pepper. Set aside.
- Slice the peppers and onion into long strips. Cut the jalapeño into rounds and chop the green garnishing. Set aside.
- Heat the remaining oil in a cast iron skillet. Add the steak and cook on both sides for approximately 5 minutes each side.
- Add the peppers, onion, and jalapeño and cover if possible. Let it cook for about 3-4 minutes.
- Adjust the salt and pepper, garnish with fresh cilantro and scallion and serve.
Notes
- Make sure the cast iron skillet is very hot for better searing of the steak.
- The fajita seasoning can be adjusted to your spice preference.
