  • 4 nori sheets
  • 200g cooked salmon or crab meat
  • 1, sliced avocado
  • 8 black olives, chopped
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 tablespoons mayonnaise
  • 1 teaspoon wasabi
  • 2 tablespoons masago (fish roe, optional)
  • soy sauce, for serving

Instructions

  1. Prepare the Sushi Rice:
    • Rinse 2 cups of sushi rice until the water runs clear.
    • Cook the rice according to the package instructions.
    • Mix rice vinegar, sugar, and salt in a small bowl until dissolved.
    • Once the rice is cooked, fold in the vinegar mixture delicately. Let it cool to room temperature.
  2. Prepare the Filling:
    • Mix the cooked salmon or crab meat with mayonnaise and a bit of wasabi for a spicy kick.
    • Slice the avocado into thin wedges.
  3. Assemble the Sushi Rolls:
    • Place a sheet of nori on a bamboo sushi mat, shiny side down.
    • Spread an even layer of the prepared sushi rice over the nori, leaving a small border at the top.
    • Add a line of the salmon or crab mixture and avocado slices across the rice.
    • Carefully roll the mat until the nori closes and shapes a tight cylinder, applying gentle pressure.
    • Slice the roll into 6-8 equal pieces using a sharp, wet knife.
  4. Decorate the Sushi:
    • Place a small circle of avocado on top of each sushi piece to form the iris of the “eye.”
    • Add a piece of black olive in the center of the avocado slice to complete the pupil.

Notes

  • Keep your hands damp with water when handling sushi rice to prevent sticking.
  • Use a sharp knife to cut the rolls and wet it between slices for smoother cuts.
  • You can add masago (fish roe) around the edge of the rolls for an extra burst of flavor.
