Description

This delicious artichoke chicken salad is a perfect combination of flavors and textures. It’s great over a salad, in lettuce cups, or on keto-friendly bread.


Ingredients

  • 3 cups rotisserie chicken (chopped)
  • 1 cup artichoke hearts (chopped)
  • 1 cup finely chopped baby spinach
  • 1/2 cup parmesan cheese (coarsely grated)
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1/3 cup walnuts (toasted and chopped)
  • 1/4 cup red onion (diced)
  • 2 cloves garlic (grated)
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Add the mayonnaise, sour cream, grated garlic, lemon juice, salt, and pepper to a large mixing bowl.
  2. Whisk until well combined.
  3. In the same bowl, add in the remaining ingredients over the dressing.
  4. Mix until everything is combined and well coated in the dressing.
  5. Serve over a salad, in lettuce cups, on your favorite keto-friendly bread, or all on its own.
