This delicious artichoke chicken salad is a perfect combination of flavors and textures. It’s great over a salad, in lettuce cups, or on keto-friendly bread.

- 3 cups rotisserie chicken (chopped)
- 1 cup artichoke hearts (chopped)
- 1 cup finely chopped baby spinach
- 1/2 cup parmesan cheese (coarsely grated)
- 1/2 cup mayonnaise
- 1/3 cup sour cream
- 1/3 cup walnuts (toasted and chopped)
- 1/4 cup red onion (diced)
- 2 cloves garlic (grated)
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Add the mayonnaise, sour cream, grated garlic, lemon juice, salt, and pepper to a large mixing bowl.
- Whisk until well combined.
- In the same bowl, add in the remaining ingredients over the dressing.
- Mix until everything is combined and well coated in the dressing.
- Serve over a salad, in lettuce cups, on your favorite keto-friendly bread, or all on its own.
