- 2 large eggs
- 1/2 cup all-purpose flour

- 2 green onions, finely chopped

- 1/4 cup fresh basil leaves, chopped

Instructions
- Prepare Zucchinis: Grate the zucchinis and place them in a bowl. Sprinkle with salt and let them sit for 10 minutes. This will help draw out excess moisture. After 10 minutes, use a clean kitchen towel to squeeze out as much liquid as possible from the grated zucchinis.
- Make the Batter: In a large bowl, whisk the eggs. Add the drained zucchini, flour, Parmesan cheese, green onions, garlic, black pepper, and chopped basil. Mix until well combined.
- Cook the Fritters: Heat a few tablespoons of olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter. Flatten slightly to form a patty. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil. Repeat with remaining batter, adding more oil to the skillet as needed.
- Serve: Stack the fritters on a plate and garnish with additional basil leaves if desired.
