Description

A deliciously tender and flavorful corned beef brisket slow-cooked with aromatic spices and vegetables.


Ingredients

  • 3 lbs corned beef brisket
  • 1 tbsp whole peppercorns
  • 1 tbsp coriander seeds
  • 1 large onion, quartered
  • 3 cloves garlic, smashed
  • 3 bay leaves
  • 4 cups beef broth or enough to cover the brisket
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 1 small head of cabbage, cut into wedges

Instructions

  1. Rinse the Brisket: Rinse the corned beef brisket under cold water to remove excess brine. Pat dry with paper towels.
  2. Season the Brisket: Place the brisket in a large pot or Dutch oven. Sprinkle the whole peppercorns and coriander seeds over the top.
  3. Add Aromatics: Add the quartered onion, smashed garlic, and bay leaves around the brisket.
  4. Add Broth: Pour enough beef broth over the brisket to completely cover it.
  5. Simmer: Set the pot over medium-high heat and bring to a simmer. Reduce heat to low, cover, and let it cook gently for about 2.5 to 3 hours, or until the meat is tender.
  6. Add Vegetables: Add the carrots and potatoes to the pot. Continue to simmer for an additional 30 minutes.
  7. Cook Cabbage: Add the cabbage wedges and cook for another 15 minutes, or until all the vegetables are tender.
  8. Slice and Serve: Remove the brisket from the pot and let it rest for about 10 minutes. Slice against the grain into thin slices. Serve with the cooked vegetables.
