Description

Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce

Instructions

  1. Prep ingredients: Wash zucchinis and slice them into half-moons. Clean mushrooms with a damp paper towel and slice.
  2. Heat oil: In a large skillet over medium heat, add olive oil until shimmering.
  3. Sauté garlic: Add minced garlic to the skillet and sauté for about one minute until fragrant.
  4. Cook zucchini: Add zucchini slices and cook for about five minutes until they start to soften.
  5. Add mushrooms: Stir in sliced mushrooms and soy sauce; cook for another five minutes until veggies are tender.
  6. Serve: Transfer to plates, garnishing with fresh herbs or cheese if desired.
