Description

Soft and chewy peanut butter cookies topped with a chocolate kiss.


Ingredients

  • 1 cup (200g) unsalted butter, softened
  • 1 cup (200g) creamy peanut butter
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) packed brown sugar
  • 2 large eggs
  • 2 teaspoons (10ml) vanilla extract
  • 3 cups (360g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (2g) salt
  • 48 milk chocolate kisses, unwrapped

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until smooth.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, combine flour, baking soda, and salt. Gradually add to the peanut butter mixture, mixing until just combined.
  5. Shape dough into 1-inch balls and place 2 inches apart on prepared baking sheets.
  6. Bake for 8-10 minutes, or until edges are lightly golden.
  7. Immediately press a chocolate kiss into the center of each cookie while still warm.
  8. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
