Description

Delicious peanut butter jelly donut cookies filled with jam and rolled in sugar.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup strawberry or raspberry jam
  • Granulated sugar for rolling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Main Ingredients: In a large bowl, mix together the peanut butter, sugar, and egg until well combined.
  3. Add Other Ingredients: Stir in the vanilla extract, flour, baking soda, and salt until a smooth dough forms.
  4. Shape the Cookies: Roll the dough into 1-inch balls. Roll each ball in granulated sugar to coat.
  5. Create Indentations: Place the dough balls onto the prepared baking sheet. Use your thumb or the back of a small spoon to create a small well in the center of each ball.
  6. Add Jam Filling: Spoon a small amount of jam into the indentation of each cookie.
  7. Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
  8. Cool Down: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure the peanut butter and egg are at room temperature for better mixing.
  • If the dough is too sticky, slightly chill it in the fridge for easy handling.
  • Experiment with different jams or jellies for varied flavors.
  • Store cookies in an airtight container to maintain freshness for several days.
  • For a twist, try sprinkling a pinch of sea salt over the cookies before baking for a sweet-salty combo.
