- 15 ounces chickpeas (garbanzo beans), drained and thoroughly dried
- 1/2 cup whole oats
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, blend the chickpeas until smooth.
- Add oats, maple syrup, vanilla extract, and salt. Blend until fully combined.
- Stir in mini chocolate chips.
- Drop spoonfuls of the mixture onto a lined baking sheet.
- Bake for 10-12 minutes or until golden brown.
- Let cool before serving.
Notes
- Store cookies in an airtight container for up to a week.
- Can substitute maple syrup with honey if desired.
