Description

Delicious and healthy chickpea oat cookies made with natural ingredients.


Ingredients

  • 15 ounces chickpeas (garbanzo beans), drained and thoroughly dried
  • 1/2 cup whole oats
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend the chickpeas until smooth.
  3. Add oats, maple syrup, vanilla extract, and salt. Blend until fully combined.
  4. Stir in mini chocolate chips.
  5. Drop spoonfuls of the mixture onto a lined baking sheet.
  6. Bake for 10-12 minutes or until golden brown.
  7. Let cool before serving.
