Description

A delicious and hearty stuffed baked potato dish filled with ground beef, corn, and cheese.

Ingredients

Scale
  • 4 pieces large baking potatoes
  • 1 pound ground beef
  • 1 cup sweet corn kernels, cooked or canned
  • 1 cup shredded cheddar cheese
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • to taste salt and black pepper
  • for garnish paprika
  • for garnish fresh parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes: Wash and scrub the potatoes. Pierce each potato with a fork several times. Place them on a baking sheet and bake for about 50-60 minutes, until tender.
  3. Prepare Beef Mixture: While the potatoes are baking, heat a pan over medium heat. Add ground beef and cook until browned. Season with salt and black pepper to taste. Drain any excess fat.
  4. Hollow and Stuff Potatoes: Once the potatoes are done, remove them from the oven. Cut each potato lengthwise and scoop out the insides, leaving a thin shell. In a bowl, mash the scooped-out potato with butter, sour cream, salt, and pepper.
  5. Assemble and Bake Again: Fill each potato shell with a layer of mashed potato, then add the cooked beef mixture. Top with corn kernels and shredded cheddar cheese. Return to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  6. Garnish and Serve: Remove from the oven and garnish with paprika and fresh parsley. Serve hot.

Notes

  • For extra flavor, add chopped onions and garlic to the beef mixture.
  • If you prefer a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the filling.
  • Use a different cheese like mozzarella or gouda for a unique taste.
  • Serve with a side salad for a complete meal.
