A delightful and refreshing dessert made with layers of lemon cake, lemon pudding, raspberry sauce, and whipped cream.

- 1 box lemon cake mix
- ingredients as per box instructions (usually eggs, oil, water)
- 2 cups milk
- 1 package (3.4 oz) of instant lemon pudding mix
- 2 cups fresh raspberries
- 1/4 cup sugar
- 2 tablespoons water
- 1 tablespoon lemon juice
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Additional fresh raspberries for layers and garnish
- Lemon slices for garnish
Instructions
- Bake the Lemon Cake:
Preheat the oven according to the cake mix instructions.
Prepare the lemon cake as per instructions on the box.
Allow the cake to cool completely, then cut into cubes. - Prepare the Lemon Pudding:
In a medium bowl, whisk together the milk and instant lemon pudding mix until thickened.
Chill in the refrigerator until ready to use. - Make the Raspberry Sauce:
In a small saucepan over medium heat, combine raspberries, sugar, water, and lemon juice.
Cook while stirring until the raspberries break down and the mixture thickens.
Remove from heat and allow to cool. - Prepare the Whipped Cream:
In a chilled mixing bowl, beat the heavy whipping cream until soft peaks form.
Gradually add powdered sugar and vanilla extract, continue to whip until stiff peaks form. - Assemble the Trifle:
In a trifle bowl, layer half of the cake cubes, followed by half of the raspberry sauce, and a layer of fresh raspberries.
Add half of the lemon pudding, spreading evenly, and then half of the whipped cream.
Repeat the layers once more, finishing with a final topping of whipped cream.
Garnish the top with more fresh raspberries and lemon slices.
Notes
- Ensure the cake is completely cooled before cutting to prevent crumbling.
- For extra flavor, zest a lemon into the whipped cream.
- If the raspberry sauce is too thick, add a little more water.
- Make the trifle a day ahead to allow flavors to meld, keeping it covered in the refrigerator.
