Description

Delicious chocolate covered peanuts made with simple ingredients.


Ingredients

Scale
  • 2 cups salted peanuts
  • 8 ounces sugar-free semi-sweet chocolate (chopped)
  • 1/3 cup creamy peanut butter (no sugar)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Finely chop the chocolate bars and add them to a microwave safe bowl.
  2. Add in the peanut butter, then microwave for 1 minute.
  3. Whisk to combine and if the chocolate has not completely melted, continue to heat in the microwave in 10 second increments, making sure not to overheat the chocolate and risk it seizing up, becoming grainy or lumpy.
  4. Once the chocolate and peanut butter is fully melted and smooth, whisk in the vanilla extract.
  5. Pour in the peanuts and stir, making sure all the peanuts are well coated.
  6. Using a silicone spatula or spoon, add clumps of the chocolate covered peanuts onto a baking sheet lined with parchment paper.
  7. Chill in the fridge for at least 1-2 hours or until fully set before serving.

Notes

  • For best results, make sure not to overheat the chocolate.
  • Store any leftovers in an airtight container.
