Description

This delicious French toast recipe is perfect for breakfast or brunch, made with thick brioche or challah and topped with fresh blueberry sauce and Greek yogurt.


Ingredients

  • 4 slices thick brioche or challah bread
  • 2 large eggs
  • 1 cup whole milk (or dairy alternative)
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar
  • 1 cup fresh blueberries (or frozen)
  • ½ cup plain Greek yogurt
  • 2 tbsp unsalted butter

Instructions

  1. In a bowl, whisk together eggs, milk, sugar, and cinnamon until frothy.
  2. Heat butter in a nonstick skillet over medium heat until sizzling.
  3. Briefly dip each bread slice into the egg mixture on both sides.
  4. Cook in the skillet for 3-4 minutes per side until golden brown.
  5. In another pan, combine blueberries with a splash of water; cook until they burst into sauce.
  6. Cut the French toast into fingers and serve topped with Greek yogurt and blueberry sauce.

Notes

  • Using frozen blueberries is a great alternative if fresh ones are unavailable.
  • For a dairy-free option, substitute with almond milk or oat milk.
