Description

A delicious roasted vegetable dish featuring asparagus, cherry tomatoes, and mozzarella balls drizzled with balsamic glaze.


Ingredients

  • 1 lb fresh asparagus
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 1/4 cup fresh basil leaves
  • 3 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse asparagus under cold water and snap off tough ends; place in a large bowl.
  3. Drizzle with olive oil and season with salt and pepper; toss until coated.
  4. Add halved cherry tomatoes to the bowl and mix gently.
  5. Spread mixture evenly on a baking sheet lined with parchment paper and roast for 15-20 minutes until tender but crisp.
  6. In the last 5 minutes of roasting, sprinkle mozzarella over the veggies to melt slightly.
  7. Remove from oven, toss in fresh basil leaves, drizzle with balsamic glaze, and serve warm.
