- 4 salmon fillets, skinless
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling: In a bowl, mix the chopped spinach, cream cheese, mozzarella cheese, and Parmesan cheese until well combined.
- Prepare the Salmon: Make a slit in the center of each salmon fillet to form a pocket. Be careful not to cut all the way through.
- Stuff the Salmon: Spoon the spinach and cheese mixture into each pocket of the salmon fillets.
- Season the Salmon: In another bowl, mix the olive oil, lemon juice, garlic, dill, parsley, salt, pepper, Italian seasoning, and paprika. Brush this mixture over the top of the salmon fillets.
- Bake the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Bake for 18-20 minutes or until the salmon is cooked through and flakes easily with a fork.
