Ingredients

  • 4 salmon fillets, skinless
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling: In a bowl, mix the chopped spinach, cream cheese, mozzarella cheese, and Parmesan cheese until well combined.
  3. Prepare the Salmon: Make a slit in the center of each salmon fillet to form a pocket. Be careful not to cut all the way through.
  4. Stuff the Salmon: Spoon the spinach and cheese mixture into each pocket of the salmon fillets.
  5. Season the Salmon: In another bowl, mix the olive oil, lemon juice, garlic, dill, parsley, salt, pepper, Italian seasoning, and paprika. Brush this mixture over the top of the salmon fillets.
  6. Bake the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Bake for 18-20 minutes or until the salmon is cooked through and flakes easily with a fork.
