Description
This teriyaki chicken dish is a delightful blend of flavors with fresh pineapple and bell peppers.

- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey or brown sugar
- 1 1/2 lbs boneless, skinless chicken breasts, cut into chunks
- 1 cup fresh pineapple chunks
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- Salt and black pepper, to taste
- Sliced green onions and sesame seeds for garnish
Instructions
- In a bowl, whisk together teriyaki sauce, soy sauce, honey, garlic, and ginger.
- Lightly season chicken with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook for 5–6 minutes, stirring occasionally, until lightly browned.
- Add pineapple chunks and chopped bell peppers to the skillet.
- Pour the sauce over the chicken mixture and stir to coat evenly.
- Reduce heat to medium and simmer for 6–8 minutes, until the sauce thickens and chicken is fully cooked.
- Remove from heat and garnish with green onions and sesame seeds before serving.
Notes
- This dish works well served over rice or quinoa.
- You can substitute the chicken for tofu for a vegetarian option.
