  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 tablespoon lemon juice (optional for extra zest)

Instructions

  1. Prepare the Steak: Let the steak sit at room temperature for about 30 minutes for even cooking. Rub both sides with olive oil, salt, and pepper.
  2. Make the Chimichurri Sauce: In a bowl, combine parsley, cilantro, garlic, chili, dried oregano, and salt. Add red wine vinegar, lemon juice, and olive oil. Mix well. Taste and adjust seasoning if necessary. Set aside to let flavors meld.
