Description

Ingredients

  • 2 pieces chicken breast
  • 2 lime, juiced (plus slices for garnish)
  • 1 cup jasmine rice, cooked
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, mix lime juice, olive oil, minced garlic, soy sauce, honey, red chili flakes, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes in the refrigerator.
  2. Cook the Chicken: Preheat the grill to medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side, or until fully cooked. Once cooked, allow the chicken to rest for a few minutes before slicing.
  3. Prepare the Rice: Cook jasmine rice according to package instructions. Allow it to cool slightly before stacking.
  4. Assemble the Stack: On a plate, form a base with the cooked rice. Lay avocado slices over the rice. Place the sliced grilled chicken on top of the avocado.
  5. Garnish: Sprinkle chopped cilantro over the stack. Add lime slices on top for garnish.
