- 2 pieces chicken breast
- 2 lime, juiced (plus slices for garnish)
- 1 cup jasmine rice, cooked
- 1 avocado, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 1/2 teaspoon red chili flakes
- 2 tablespoons soy sauce
- 2 tablespoons honey
- salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, mix lime juice, olive oil, minced garlic, soy sauce, honey, red chili flakes, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes in the refrigerator.
- Cook the Chicken: Preheat the grill to medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side, or until fully cooked. Once cooked, allow the chicken to rest for a few minutes before slicing.
- Prepare the Rice: Cook jasmine rice according to package instructions. Allow it to cool slightly before stacking.
- Assemble the Stack: On a plate, form a base with the cooked rice. Lay avocado slices over the rice. Place the sliced grilled chicken on top of the avocado.
- Garnish: Sprinkle chopped cilantro over the stack. Add lime slices on top for garnish.

- For extra flavor, consider adding some zest from the lime into the marinade.
- Ensure the grill is properly heated before cooking the chicken to achieve a nice sear.
- To make the stack more visually appealing, consider using a mold or ramekin to shape the rice.
