Description

Indulge in this delightful dessert featuring light and airy cream puffs filled with a luscious raspberry cream filling and topped with fresh berries.

Ingredients

Scale
  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 pinch of salt
  • 1 cup heavy cream
  • 1/2 cup raspberry puree
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh raspberries
  • Mint leaves
  • Powdered sugar for dusting
  • Additional butter or non-stick spray for greasing the baking sheet

Instructions

  1. Prepare the Cream Puffs: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water, milk, butter, and salt. Bring to a boil over medium heat.
  3. Add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides.
  4. Transfer the dough to a mixing bowl and let cool for a few minutes.
  5. Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  6. Spoon or pipe the dough onto the prepared baking sheet in small mounds, spacing them apart.
  7. Bake for 20-25 minutes or until puffed and golden brown. Let cool completely.
  8. Make the Raspberry Cream Filling: In a mixing bowl, whip the heavy cream until soft peaks form.
  9. Gently fold in the raspberry puree, powdered sugar, and vanilla extract until well combined and fluffy.
  10. Assemble the Cream Puffs: Once the puffs are cool, slice them in half horizontally.
  11. Pipe or spoon the raspberry cream filling into the bottom halves of the puffs.
  12. Place the top halves back on.
  13. Decorate: Pipe a little more cream on top of each cream puff.
  14. Garnish with fresh raspberries and mint leaves.
  15. Dust with powdered sugar before serving.

Notes

  • Ensure that the cream puffs are cooled completely before filling to prevent the cream from melting.
  • For a richer flavor, you can add a few drops of almond extract to the cream filling.
  • If the cream puffs deflate, they might not have baked long enough. Ensure they are firm and golden before taking them out of the oven.
  • You can enhance the raspberry flavor by stirring in a tablespoon of raspberry liqueur into the cream filling.
