Instructions
- Prepare the Cream Puffs: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine water, milk, butter, and salt. Bring to a boil over medium heat.
- Add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides.
- Transfer the dough to a mixing bowl and let cool for a few minutes.
- Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Spoon or pipe the dough onto the prepared baking sheet in small mounds, spacing them apart.
- Bake for 20-25 minutes or until puffed and golden brown. Let cool completely.
- Make the Raspberry Cream Filling: In a mixing bowl, whip the heavy cream until soft peaks form.
- Gently fold in the raspberry puree, powdered sugar, and vanilla extract until well combined and fluffy.
- Assemble the Cream Puffs: Once the puffs are cool, slice them in half horizontally.
- Pipe or spoon the raspberry cream filling into the bottom halves of the puffs.
- Place the top halves back on.
- Decorate: Pipe a little more cream on top of each cream puff.
- Garnish with fresh raspberries and mint leaves.
- Dust with powdered sugar before serving.
