A comforting chicken noodle soup made with fresh ingredients.
Ingredients

- 1 tablespoon olive oil (or sesame oil)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced or grated
- 4 cups low-sodium chicken broth
- 2 cups water
- 2 cups cooked, shredded rotisserie chicken
- 1 cup carrots, sliced thinly or julienned
- 1 cup celery, sliced
- 2 cups bok choy or spinach (optional)
- 2 tablespoons soy sauce (or tamari)
- 1 tablespoon rice vinegar (optional)
- 1 teaspoon sesame oil (optional)
- 1 teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 4 oz dry egg noodles, rice noodles, or any noodles of your choice
- Fresh cilantro or green onions, chopped
- Lime wedges
- A drizzle of sesame oil or chili oil
- Sriracha or your favorite hot sauce (optional)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 2-3 minutes until softened. Add the minced garlic and grated ginger; sauté for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and water, stirring to combine. Bring the mixture to a simmer. Add the shredded chicken, sliced carrots, and sliced celery, then let simmer for 10-15 minutes.
- Season the soup with soy sauce, rice vinegar, and sesame oil. If desired, add crushed red pepper flakes for heat. Adjust seasoning with salt and pepper as needed.
- In a separate pot, bring water to a boil and cook the noodles according to package instructions (4-6 minutes). Drain and set aside.
- Add the cooked noodles to the soup or place in serving bowls and pour the hot soup over them. Stir in any greens in the last few minutes of cooking.
- Ladle the soup into bowls, garnish with fresh cilantro or green onions, and serve with lime wedges and any desired additional garnishes.

- For a spicier kick, add more crushed red pepper flakes or hot sauce.
