Ingredients

  • 1 bell pepper (any color), sliced
  • 2 medium carrots, julienned
  • 1 yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons toasted sesame oil
  • Fresh cilantro (optional)

Instructions

  1. Wash and chop all vegetables: cabbage, bell pepper, carrots, and onion.
  2. Heat sesame oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add minced garlic and grated ginger; sauté for 30 seconds until fragrant.
  4. Stir in cabbage, bell pepper, carrots, and onion; cook for 5-7 minutes until tender-crisp.
  5. Drizzle soy sauce over the vegetables and stir-fry for another minute.
  6. Remove from heat; garnish with cilantro if desired and serve hot over rice or noodles.
