Description

This delicious Lo Mein Chicken Stir-Fry is quick and easy to make, featuring tender chicken, colorful vegetables, and a savory sauce.


Ingredients

  • 12 oz lo mein noodles (or spaghetti)
  • 2 tablespoons vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 cup shredded cabbage
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/4 cup chicken broth

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and chicken broth to make the sauce.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook 4–5 minutes until browned and cooked through; remove and set aside.
  4. Add remaining oil to the skillet. Sauté garlic and ginger for 30 seconds until fragrant.
  5. Add carrots, bell peppers, and cabbage. Stir-fry for 3–4 minutes until slightly tender.
  6. Return chicken to the skillet and add cooked noodles.
  7. Pour sauce over everything and toss well to coat; cook 2–3 minutes until heated through and glossy.
  8. Garnish with green onions and serve hot.

Notes

  • Feel free to add other vegetables like broccoli or bok choy for extra nutrition.
  • For a spicier version, add red pepper flakes.
