This delicious Lo Mein Chicken Stir-Fry is quick and easy to make, featuring tender chicken, colorful vegetables, and a savory sauce.

- 12 oz lo mein noodles (or spaghetti)
- 2 tablespoons vegetable oil
- 1 lb chicken breast, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1 cup shredded cabbage
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/4 cup chicken broth
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and chicken broth to make the sauce.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook 4–5 minutes until browned and cooked through; remove and set aside.
- Add remaining oil to the skillet. Sauté garlic and ginger for 30 seconds until fragrant.
- Add carrots, bell peppers, and cabbage. Stir-fry for 3–4 minutes until slightly tender.
- Return chicken to the skillet and add cooked noodles.
- Pour sauce over everything and toss well to coat; cook 2–3 minutes until heated through and glossy.
- Garnish with green onions and serve hot.
Notes
- Feel free to add other vegetables like broccoli or bok choy for extra nutrition.
- For a spicier version, add red pepper flakes.
