Description

Delicious dulce de leche sandwich cookies perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 can (about 14 ounces) dulce de leche
  • Chocolate (dark for melting and drizzling)

Instructions

  1. Prepare the Dough:
    • In a bowl, whisk together the flour, cornstarch, baking powder, and salt.
    • In a separate bowl, beat the butter and sugar until light and fluffy.
    • Add the egg and vanilla extract to the butter mixture and beat until combined.
    • Gradually mix in the dry ingredients until you form a soft dough.
    • Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least an hour.
  2. Bake the Cookies:
    • Preheat your oven to 350°F (175°C).
    • Roll out one disk of dough on a lightly floured surface to about 1/4-inch thickness.
    • Use a fluted round cookie cutter to cut out cookies.
    • Place cookies on a baking sheet lined with parchment paper.
    • Bake for 10-12 minutes or until the edges are just lightly golden.
    • Remove from oven and cool on a wire rack.
  3. Assemble the Cookies:
    • Spread or pipe a generous spoonful of dulce de leche onto the flat side of a cookie.
    • Top with another cookie to form a sandwich.
  4. Decoration:
    • Melt dark chocolate in a double boiler or microwave.
    • Using a spoon or piping bag, drizzle the melted chocolate over the tops of the cookies.
    • Allow chocolate to set before serving.

Notes

  • Ensure the butter is softened to mix well with other ingredients.
  • Keep the dough cold for easier handling and to maintain shape.
  • Adjust the thickness of the cookies before baking depending on your preference for crunch versus softness.
  • Allow the cookies to cool completely before adding dulce de leche to prevent it from melting.
  • Store cookies in an airtight container to maintain freshness.
