Description

This Dorito Chicken Casserole is a quick and easy dish made with shredded chicken, creamy soup, and topped with crunchy Doritos.


Ingredients

  • 2 cups crushed Nacho Cheese Doritos (plus extra for topping)
  • 2 cups cooked shredded chicken (rotisserie or baked)
  • 1 (10 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1 (10 oz) can Rotel tomatoes with green chilies, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: sliced jalapeños, hot sauce for extra spice

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Spread a layer of crushed Doritos on the bottom of the dish.
  3. In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, Rotel, black beans, and 1 cup of shredded cheese. Mix well.
  4. Layer the chicken mixture evenly over the crushed Doritos in the dish.
  5. Sprinkle the remaining cheese on top of the mixture.
  6. Add more crushed Doritos over the cheese as the top layer (reserve this step for the last 10 minutes of baking if you want them extra crunchy).
  7. Bake uncovered for 25–30 minutes until the cheese is melted and the casserole is bubbling.
  8. Remove from oven, let sit for 5 minutes, then serve warm.

Notes

  • For extra crunch, add more Doritos on top during the last 10 minutes of baking.
