- 1 can cherry pie filling
- 1 cup fresh cherries, pitted and halved
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1 teaspoon vanilla extract
- Whipped cream for garnishing
- Additional cherries and chocolate shavings for topping
Instructions
- Prepare the Crust: Preheat oven to 325°F (160°C). Mix chocolate cookie crumbs with melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
- Make the Filling: Beat the cream cheese and sugar together until smooth and creamy. Add cocoa powder and mix until incorporated. Blend in eggs, one at a time, mixing well after each addition. Fold in sour cream and vanilla extract, followed by the melted chocolate. Pour half of the mixture over the cooled crust.
- Add the Cherry Layer: Spread cherry pie filling and fresh cherries evenly over the cheesecake layer. Pour the remaining cheesecake mixture over the cherry layer.
- Bake the Cheesecake: Bake for 50-60 minutes, or until the center is set. Turn off the oven and let the cheesecake cool with the door ajar for an hour. Refrigerate for at least 4 hours or overnight.
- Prepare the Ganache: Heat heavy cream in a saucepan over medium heat until it simmers. Remove from heat and add chopped chocolate. Stir until the chocolate is completely melted and smooth. Let cool slightly, then pour over the chilled cheesecake.
- Garnish and Serve: Once the ganache is set, decorate with whipped cream, cherries, and chocolate shavings. Remove from the springform pan and slice to serve.
