Description

A rich and creamy cherry chocolate cheesecake with a delicious crust and topping.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted unsalted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh cherries, pitted
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1/2 cup heavy cream
  • 4 oz dark chocolate, chopped
  • Powdered sugar, for dusting
  • Fresh cherries, for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).

  2. Mix the chocolate cookie crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

  3. Beat the cream cheese and sugar until smooth. Add cocoa powder and mix well. Beat in the eggs, one at a time, followed by the vanilla extract. Pour the filling over the cooled crust.

  4. Bake for about 55-65 minutes, or until the center is set. Turn off the oven, leave the door slightly open, and allow the cheesecake to cool in the oven for 1 hour.

  5. In a saucepan, combine cherries, sugar, cornstarch, and water. Cook over medium heat until the mixture thickens, stirring constantly. Let it cool, then spread over the cooled cheesecake.

  6. Heat the heavy cream until just simmering. Pour over chopped dark chocolate and stir until smooth. Allow to cool slightly, then pour over the cherry topping.

  7. Refrigerate the cheesecake for at least 4 hours, preferably overnight. Before serving, dust with powdered sugar and garnish with fresh cherries.

Notes

  • Ensure all ingredients are at room temperature to avoid lumps in the cheesecake filling.
  • For a clean slice, use a warm knife and wipe after each cut.
  • If cherries aren’t in season, canned cherry pie filling can be a substitute for the topping.
  • To prevent cracking, make sure not to overbake the cheesecake, and allow it to cool gradually.
