Description

Delicious slow-cooked BBQ chicken thighs seasoned with a flavorful spice mix.


Ingredients

  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika (or regular paprika)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 23 pounds bone-in chicken thighs (about 8 thighs)
  • 1 large yellow onion, thinly sliced
  • 1½ cups BBQ sauce

Instructions

  1. In a small bowl, combine the brown sugar, smoked paprika, kosher salt, black pepper, onion powder, and garlic powder together.
  2. Trim excess skin or gristle from the chicken thighs and pat them dry with paper towels. Rub the spice mixture evenly over the chicken thighs on both sides.
  3. Place the sliced yellow onion in the slow cooker in an even layer. Lay the seasoned chicken thighs on top of the onion slices.
  4. Place the lid on the slow cooker and cook on high for 2 hours or on low for 4 hours until the chicken thighs reach 165℉ (74℃).
  5. After cooking, remove the chicken from the slow cooker and place on a sheet pan lined with foil. Brush the top with BBQ sauce and broil for 2-3 minutes until crispy. Flip the chicken, brush the other side with BBQ sauce, and return to the broiler for another 2-3 minutes, or until crispy.
  6. Serve with additional BBQ sauce.

Notes

  • Ensure chicken is cooked to a safe internal temperature of 165℉ (74℃).
  • Can be cooked without skin for a healthier option.
