Description
Delicious slow-cooked BBQ chicken thighs seasoned with a flavorful spice mix.

- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika (or regular paprika)
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2–3 pounds bone-in chicken thighs (about 8 thighs)
- 1 large yellow onion, thinly sliced
- 1½ cups BBQ sauce
Instructions
- In a small bowl, combine the brown sugar, smoked paprika, kosher salt, black pepper, onion powder, and garlic powder together.
- Trim excess skin or gristle from the chicken thighs and pat them dry with paper towels. Rub the spice mixture evenly over the chicken thighs on both sides.
- Place the sliced yellow onion in the slow cooker in an even layer. Lay the seasoned chicken thighs on top of the onion slices.
- Place the lid on the slow cooker and cook on high for 2 hours or on low for 4 hours until the chicken thighs reach 165℉ (74℃).
- After cooking, remove the chicken from the slow cooker and place on a sheet pan lined with foil. Brush the top with BBQ sauce and broil for 2-3 minutes until crispy. Flip the chicken, brush the other side with BBQ sauce, and return to the broiler for another 2-3 minutes, or until crispy.
- Serve with additional BBQ sauce.
Notes
- Ensure chicken is cooked to a safe internal temperature of 165℉ (74℃).
- Can be cooked without skin for a healthier option.
