Description

Deliciously crispy Hasselback potatoes infused with fresh herbs and garlic.


Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cloves garlic, finely chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare Potatoes: Wash and dry the potatoes. Place each potato between two wooden spoons or chopsticks. Slice the potatoes thinly, about 1/8 inch apart, cutting down to the level of the spoons to avoid cutting all the way through.
  3. Seasoning Mix: In a small bowl, mix together the olive oil, melted butter, chopped garlic, rosemary, thyme, salt, and pepper.
  4. Coat Potatoes: Place the potatoes on a baking sheet. Brush the seasoning mix generously over each potato, making sure it seeps into the slices.
  5. Bake: Bake in the preheated oven for 45 minutes.
  6. Add Cheese: Remove the potatoes, sprinkle with Parmesan cheese, and return to the oven for an additional 10-15 minutes, until the potatoes are crispy and golden brown.
  7. Garnish: Remove from the oven and sprinkle with fresh parsley.
