Ingredients

- 2 lbs baby potatoes
- 7 oz block feta cheese
- 0 cup olive oil
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1 lemon (zested and juiced)
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, garlic, oregano, salt, and pepper.
- Roast potatoes for 35 minutes, flipping once.
- Smash potatoes gently and add feta cheese.
- Bake another 15 minutes until feta is soft and golden.
