Description

Ingredients

  • 1 (3 oz) box instant pistachio pudding mix
  • 1 (20 oz) can crushed pineapple in juice, undrained
  • 1 cup miniature marshmallows
  • 1/2 cup chopped pecans or walnuts
  • 1 (8 oz) container whipped topping, thawed
  • 1/2 cup shredded coconut (optional)
  • Maraschino cherries for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the pistachio pudding mix and the entire can of undrained crushed pineapple. Stir well until fully combined and thickened.
  2. Add in the miniature marshmallows and stir until evenly distributed.
  3. Mix in the chopped nuts gently to add texture and flavor.
  4. Fold in the thawed whipped topping using a spatula, being careful not to overmix.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld and the texture to firm up.
  6. Before serving, garnish with additional chopped nuts, maraschino cherries, and shredded coconut if desired. Serve chilled.

Notes

  • For a nut-free version, omit the chopped pecans or walnuts.
