- 1 (3 oz) box instant pistachio pudding mix
- 1 (20 oz) can crushed pineapple in juice, undrained
- 1 cup miniature marshmallows
- 1/2 cup chopped pecans or walnuts
- 1 (8 oz) container whipped topping, thawed
- 1/2 cup shredded coconut (optional)
- Maraschino cherries for garnish (optional)
Instructions
- In a large mixing bowl, combine the pistachio pudding mix and the entire can of undrained crushed pineapple. Stir well until fully combined and thickened.
- Add in the miniature marshmallows and stir until evenly distributed.
- Mix in the chopped nuts gently to add texture and flavor.
- Fold in the thawed whipped topping using a spatula, being careful not to overmix.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld and the texture to firm up.
- Before serving, garnish with additional chopped nuts, maraschino cherries, and shredded coconut if desired. Serve chilled.
Notes
- For a nut-free version, omit the chopped pecans or walnuts.
- Feel free to adjust the sweetness by adding more or less pudding mix.
