Instructions

Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth, lump-free batter. Let the batter rest for at least 30 minutes to allow the flour to fully absorb the liquid.
  2. Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter into the skillet, swirling to evenly cover the bottom. Cook for about 1-2 minutes until the edges start to lift and the underside is lightly browned. Carefully flip the crepe and cook for another 30 seconds. Transfer the crepe to a plate and repeat the process with the remaining batter.
  3. Prepare the Cream Filling: In a chilled bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
  4. Assemble the Crepe Rolls: Spread a thin layer of the whipped cream filling over each crepe. Roll each crepe tightly and slice into bite-sized pieces.
  5. Serving: Arrange the crepe rolls on a serving platter. Top with crushed chocolate cookies. Garnish with mint leaves if desired.
