Description

Ingredients

  • 1 small onion, diced
  • 4 tablespoons all-purpose flour
  • 2 cups chicken stock or broth
  • 4 ounces cream cheese, cubed
  • 1/4 cup milk
  • 10 ounces frozen mixed vegetables
  • 3 cups cooked rotisserie chicken, diced
  • 32 ounces frozen tater tots
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika (optional)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet, melt butter over medium-high heat. Add diced onion and cook 3–4 minutes until translucent.
  3. Stir in flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in chicken stock until smooth. Add onion powder, garlic powder, paprika, thyme, salt, and pepper. Simmer until slightly thickened.
  5. Reduce heat to low and stir in cream cheese and milk until smooth and creamy.
  6. Add frozen vegetables and diced chicken, stirring to coat everything evenly.
  7. Spread the mixture evenly into the prepared baking dish.
  8. Arrange frozen tater tots in a single layer on top of the chicken mixture.
  9. Bake uncovered for 35 minutes until tater tots are golden brown and crispy.
  10. Sprinkle shredded cheddar cheese over the top and bake for another 5 minutes, or broil for 1–2 minutes until the cheese is melted and bubbly.
  11. Let rest for 5 minutes before serving. Garnish with parsley if desired.
