Description

A fragrant and delicious chicken biryani, marinated and cooked to perfection.


Ingredients

Scale
  • 1 lb chicken (bone-in or boneless)
  • ½ cup plain yogurt
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 1½ cups basmati rice (long-grain)
  • 1½ tablespoons ghee or oil
  • 1 large onion, thinly sliced
  • 1 green chili, slit
  • 1 teaspoon cumin seeds
  • 23 whole cloves
  • 2 green cardamom pods
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 teaspoon salt
  • ¼ cup chopped cilantro
  • ¼ cup chopped mint leaves
  • 1¾ cups water or chicken broth
  • A few strands of saffron soaked in 2 tablespoons warm milk (optional)

Instructions

  1. For marinating, combine chicken with yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, garam masala, and salt. Let it marinate for at least 30 minutes.
  2. For the biryani rice, heat ghee or oil in a pot and sauté onion until golden brown.
  3. Add green chili, cumin seeds, cloves, cardamom pods, bay leaf, and cinnamon stick. Stir for a minute.
  4. Mix in basmati rice and sauté for 2-3 minutes, ensuring the rice is coated.
  5. Add water or chicken broth and additional salt. Bring to a boil.
  6. Add marinated chicken and bring to a simmer.
  7. If using Instant Pot: Pressure cook for 6 minutes on high, then let the pressure release naturally for 10 minutes.
  8. If using stovetop: Cover tightly with a lid or foil and cook on low heat for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  9. Garnish with cilantro and mint leaves before serving.

Notes

  • For extra flavor, you can add fried onions as a garnish.
  • Make sure the chicken is cooked through before serving.
