Description
A fragrant and delicious chicken biryani, marinated and cooked to perfection.
Ingredients

- 1 lb chicken (bone-in or boneless)
- ½ cup plain yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1½ cups basmati rice (long-grain)
- 1½ tablespoons ghee or oil
- 1 large onion, thinly sliced
- 1 green chili, slit
- 1 teaspoon cumin seeds
- 2–3 whole cloves
- 2 green cardamom pods
- 1 bay leaf
- 1 cinnamon stick
- 1 teaspoon salt
- ¼ cup chopped cilantro
- ¼ cup chopped mint leaves
- 1¾ cups water or chicken broth
- A few strands of saffron soaked in 2 tablespoons warm milk (optional)
Instructions
- For marinating, combine chicken with yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, garam masala, and salt. Let it marinate for at least 30 minutes.
- For the biryani rice, heat ghee or oil in a pot and sauté onion until golden brown.
- Add green chili, cumin seeds, cloves, cardamom pods, bay leaf, and cinnamon stick. Stir for a minute.
- Mix in basmati rice and sauté for 2-3 minutes, ensuring the rice is coated.
- Add water or chicken broth and additional salt. Bring to a boil.
- Add marinated chicken and bring to a simmer.
- If using Instant Pot: Pressure cook for 6 minutes on high, then let the pressure release naturally for 10 minutes.
- If using stovetop: Cover tightly with a lid or foil and cook on low heat for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Garnish with cilantro and mint leaves before serving.
Notes
- For extra flavor, you can add fried onions as a garnish.
- Make sure the chicken is cooked through before serving.
