Instructions

  1. Prepare the Potatoes:
    – Preheat your oven to 375°F (190°C).
    – Peel and thinly slice the potatoes. Set aside in cold water to prevent browning.
  2. Make the Cheese Sauce:
    – In a saucepan over medium heat, melt the butter.
    – Whisk in the flour and cook for about 1 minute until it turns golden.
    – Gradually add the milk and cream, whisking constantly to prevent lumps.
    – Add garlic powder, salt, and pepper.
    – Stir in 1.5 cups of cheddar cheese until melted and smooth.
  3. Assemble the Casserole:

    – Layer half of the potatoes in a greased baking dish.
    – Pour half of the cheese sauce over the potatoes.
    – Repeat with the remaining potatoes and sauce.
  4. Bake:
    – Sprinkle the remaining 0.5 cup of cheddar cheese on top.
    – Cover with foil and bake for 30 minutes.
    – Remove the foil and bake for an additional 20-25 minutes, until the top is golden and bubbly.
  5. Garnish and Serve:
    – Let the casserole sit for 5-10 minutes before serving.
    – Garnish with chopped fresh parsley.
