Description

Delicious beef enchiladas topped with cheese and enchilada sauce.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 small tortillas
  • 1 cup black beans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in half the enchilada sauce and let it simmer for 2-3 minutes.
  4. Lay out a tortilla and fill it with the beef mixture. Sprinkle with shredded cheese, roll it up tightly, and place seam-side down in a greased baking dish.
  5. Repeat this process with the remaining tortillas.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, let cool for a few minutes, and enjoy.

Notes

  • Feel free to add more toppings such as sour cream or guacamole before serving.
  • For a spicier version, add diced jalapeños to the beef mixture.
