Description

A delicious meatloaf topped with crispy bacon and gooey cheese, perfect for family dinners.

Ingredients

Scale
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked, crumbled bacon
  • 1/2 cup barbecue sauce
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp paprika

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix the Ingredients: In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onion, garlic, Worcestershire sauce, milk, salt, pepper, thyme, and paprika. Mix until well combined but don’t overwork the meat to keep it tender.
  3. Shape the Meatloaf: Transfer the mixture to a lightly greased loaf pan or shape it into a loaf on a baking sheet.
  4. Add Cheese: Make a slight indentation along the top of the meatloaf. Fill with shredded cheddar cheese, pressing it slightly into the meat.
  5. Top with Bacon and Sauce: Sprinkle the crumbled bacon over the cheese and drizzle with barbecue sauce.
  6. Bake: Place the meatloaf in the preheated oven and bake for 60–75 minutes, or until the internal temperature reaches 160°F (71°C). If desired, add extra barbecue sauce on top during the last 15 minutes for more flavor.

Notes

  • Resting: Let the meatloaf rest for about 10 minutes before slicing to retain its juices.
  • Customizing Cheese: Feel free to experiment with different types of cheese for varied flavor profiles.
  • Spice Up: If you prefer a spicier taste, add a dash of hot sauce to the meat mixture.
  • Texture Variation: For a crunchier top, broil the meatloaf for the last 3-5 minutes, keeping a close eye to avoid burning.
