- 6 boneless chicken thighs
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 4 cups chicken broth (low sodium)

Instructions
- Marinate the Chicken – Start by marinating the chicken thighs. In a medium bowl, mix together soy sauce, sesame oil, brown sugar, minced garlic, and grated ginger. Add the chicken and coat it well. Cover and let it marinate for at least 30 minutes, or up to 4 hours in the fridge. The longer it marinates, the richer the flavor.
- Air Fry the Chicken – Preheat your air fryer to 380°F (193°C). Place the chicken thighs in a single layer in the air fryer basket. Cook for 18–20 minutes, flipping halfway through, until the chicken is deeply golden and caramelised on the outside. Depending on your air fryer model, you may need to cook in batches.
- Make the Garlic Ginger Broth – While the chicken cooks, prepare the broth. In a medium saucepan over medium heat, combine the chicken broth, soy sauce, sesame oil, brown sugar, sliced garlic, and ginger coins. Let the broth simmer gently for about 10–15 minutes to allow the flavors to meld. Optional: For a slightly thicker broth, stir in the cornstarch slurry and cook for another 2–3 minutes until lightly thickened.
- Assemble the Bowls – Scoop hot rice into bowls. Slice or chop the caramelised soy chicken into bite-sized pieces and place on top of the rice. Ladle over the warm garlic ginger broth, making sure to get a bit of everything — the broth, the garlic slices, and the tender ginger pieces. Garnish with chopped scallions or sesame seeds if you like.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
- Adjust the thickness of the broth according to your preference by modifying the cornstarch slurry.
