Ingredients

  • 8 slices of crispy bacon
  • 4 slices of cheddar cheese
  • 2 large eggs
  • 1 tablespoon butter

  • 1 tablespoon mayonnaise or mustard (optional)

Instructions

  1. Cook the Bacon: In a skillet over medium heat, cook the bacon until it is crispy. Drain on paper towels and set aside.
  2. Prepare the Eggs: In a small bowl, beat the eggs with a pinch of salt and pepper. In a separate skillet, melt the butter over medium heat, and pour in the eggs. Cook, stirring gently, until they are scrambled and set. Set aside.
  3. Toast the Croissants: Preheat your oven to 350°F (175°C). Slice the croissants in half and place them on a baking sheet. Toast in the oven for about 5 minutes until they are lightly crispy.
  4. Assemble the Sandwich: Spread mayonnaise or mustard on the bottom half of each croissant, if using. Layer scrambled eggs, cheddar cheese, and crispy bacon on the bottom halves. Top with the other half of the croissant.
  5. Melt the Cheese: Place the assembled sandwiches back in the oven for about 3-5 minutes, or until the cheese has melted.
