Description

Delicious and crispy chicken thighs roasted to perfection with fresh herbs and a hint of lemon.


Ingredients

  • 4 pieces chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons lemon juice
  • to taste Fresh herbs (such as thyme or rosemary), chopped (Use your preferred fresh herbs.)

Instructions

  1. Start by patting the chicken thighs dry using paper towels.
  2. In a bowl, mix the olive oil, minced garlic, paprika, salt, and pepper. Rub this seasoning mixture all over the chicken thighs.
  3. Preheat your oven to 425°F (220°C). Heat a large skillet over medium-high heat.
  4. Place the chicken thighs skin-side down in the skillet and sear for about 5-7 minutes until the skin becomes golden and crispy.
  5. Flip the thighs over, drizzle with lemon juice, and transfer the skillet to the preheated oven.
  6. Roast for another 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and top with freshly chopped herbs before serving.
  8. Pair it with a side of roasted vegetables or a salad.
