Instructions
- Prepare the Filling: In a medium bowl, combine the softened cream cheese, honey or maple syrup, and vanilla extract. Mix until smooth. Gently fold in the fresh blueberries.
- Assemble the Quesadilla: Spread half of the cream cheese and blueberry mixture onto one tortilla. Place the second tortilla on top, pressing lightly to seal.
- Cook the Quesadilla: Heat a non-stick skillet over medium heat and melt a small amount of butter. Place the quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese has melted.
- Serve: Remove from the skillet and let it cool for a minute. Cut the quesadilla into wedges. Garnish with powdered sugar and fresh mint or cilantro leaves if desired.
