A delicious and easy recipe for pesto chicken pasta, perfect for a quick weeknight dinner.
Ingredients

- 2 boneless skinless chicken breasts
- 8 oz pasta (penne or rotini)
- 1/2 cup basil pesto
- 1 tbsp olive oil
- 2 garlic cloves minced
- 1/2 cup cherry tomatoes (optional)
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
- Fresh basil for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sauté until fully cooked and golden brown. Remove from pan.
- In the same skillet, add garlic and cook for 30 seconds. Add cherry tomatoes if using and sauté until slightly blistered.
- Return cooked chicken to the skillet. Add cooked pasta and basil pesto. Toss everything together, adding reserved pasta water as needed.
- Top with grated Parmesan and fresh basil. Serve warm.
