Description

A delicious and easy recipe for pesto chicken pasta, perfect for a quick weeknight dinner.


Ingredients

  • 2 boneless skinless chicken breasts
  • 8 oz pasta (penne or rotini)
  • 1/2 cup basil pesto
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • 1/2 cup cherry tomatoes (optional)
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Fresh basil for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sauté until fully cooked and golden brown. Remove from pan.
  3. In the same skillet, add garlic and cook for 30 seconds. Add cherry tomatoes if using and sauté until slightly blistered.
  4. Return cooked chicken to the skillet. Add cooked pasta and basil pesto. Toss everything together, adding reserved pasta water as needed.
  5. Top with grated Parmesan and fresh basil. Serve warm.
